The SkinnyFats space did not sit empty for long. Marufuku Ramen opened in Suite 170 on February 4, 2026, marking its second Las Vegas location after the original at The Bend in the southwest valley. The San Francisco original built its name on ultra-thin noodles in a pork broth that simmers for hours, alongside Chicken Paitan, rice bowls, and izakaya-style appetizers. The Downtown Summerlin build-out adds kushiyaki, cocktails, and an outdoor patio to the format. The grand opening drew a line before the 11 a.m. doors, branded chopsticks for the first hundred guests, a ribbon cutting, and a traditional lion dance later that evening from the Lohan School of Shaolin.

A Mile East, The Resort At Summerlin Rebuilt Its Dining Lineup

Two Los Angeles quick-serve concepts anchor the change inside The Neighborhood Food Hall:
- Tacos 1986 opened Tuesday, March 17, 2026, with a mariachi band and free tacos for the first 100 guests. Those two sit inside a food hall that now also includes ai Pazzi Pizza, Pearls Oyster & Crudo Bar, and Nom Wah, with nearby venues Jade Asian Kitchen, Market Place Buffet, and Earl Grey Café, plus stand-alone rooms including ai Pazzi, Wineaux, and Hawthorn Grill.
